How to make Key Lime Pie

Limes, key limes, a red pepper that escaped my salad and Jimmy Buffett's lost shaker of salt.So the first question is what is a "Key" lime? A lime is a lime right? Well yes, but  key limes are from the Florida keys, certain other parts of the Carribean Sea, Mexico and parts south.  Both the key limes and a regular lime make good lime pie. We don't recommend bottled lime juice for this recipe, unless that's what you have and you don't want to go to the grocery store for really fresh and healthy ingredients.

This is Debbie's recipe and makes a great cold dessert during the hot summer days or at anytime! I think it is slightly less rich than cheese cake.

First  you need to buy a graham cracker pie crust or make one.  Preheat your oven to 350 if making a crust from scratch. This recipe is for a 9 inch pie pan.

Ingredients:

For crust you need 1½ cups finely ground Graham crackers, one third cup melted margarine, 3 tablespoons sugar.  Mix crumbs, butter and sugar. Firmly press into your pie pan for crust.  Bake in oven for 8-10 minutes and cool.

key lime pie at Texas Eating on Do it in TexasFor the pie filling mix the following until smooth and thickened: one 14 oz. can of condensed milk, ½ cup freshly squeezed lime juice, one 8 oz. container of frozen whipped topping thawed. Pour into pie crust. Cover and refrigerate until set.
